Grissini

Ingredients:

  • 1/2 Cup warm water (100°F to 110°F)
  • 1 1/5 Teaspoons active dry yeast
  • 1 Teaspoon sugar
  • 1 1/2 Tablespoons extra-virgin olive oil
  • 1/4 Cup (1 oz) grated parmesan cheese, divided
  • 1/2 Teaspoon kosher salt
  • 1 1/2 Cups plus 2 tablespoons all-purpose flour (about 6.18 ounces)
  • Cooking spray
  • 1 Tablespoon canola oil
  • 1 Tablespoon butter
  • 1/2 Teaspoon minced fresh garlic

 

Directions:

  1. Combine 1/2 cup warm water, yeast and sugar in the bowl of a stand mixer with the paddle attachment; let stand for 5 minutes of until bubbly. Add the olive oil, 2 tablespoons cheese, and salt to the yeast mixture; beat to combine. Weigh or lightly spoon flour into dry measuring cups; level with a knife. With the mixer on medium-low speed, gradually add the flour into the bowl; beat to combine. Turn the dough onto a floured surface, and knead 8 to 10 times until a soft elastic dough forms. Place the dough into a large bowl coated with cooking spray, turning to coat the top. Cover the dough with plastic wrap; let stand in a warm place (85°F), free from drafts, for 1 hour or until doubled in size. Punch the dough down.
  2. Preheat oven to 425°F.
  3. Turn the dough out onto a lightly floured surface. Roll the dough into an 8 inch by 6 inch rectangle. Brush the dough evenly with the canola oil; sprinkle evenly with the remaining 2 tablespoons cheese. Cut the dough lengthwise into 20 thin strips using a pizza cutter. Place the strips on a baking sheet coated with cooking spray. Bake in batches at 425°F for 8 to 12 minutes or until golden and crisp. 
  4. Melt the butter. Add the garlic to the butter, stirring to distribute. Brush over the grissini.

 

Terrific for a party snack or bready side that can also double as table decor, these Italian-style breadsticks are absolutely addictive, and they're surprisingly easy to make.
