Lemony Bombay Gin & Tonic

Ingredients:

  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon coarsely chopped, peeled fresh ginger
  • 1 (1/2-ounce) package fresh mint
  • 1 cup gin
  • 2/3 cup fresh lemon juice
  • 2 cups tonic water

 

Method:

Combine water and sugar in a small saucepan; bring to a boil over medium heat. Simmer until sugar just dissolves, stirring occasionally. Remove from heat and immediately add ginger and mint. Steep 20 minutes; strain. Stir in gin and lemon juice; cover and chill until ready to serve. Stir in tonic water and serve over ice. Yield: about 6 servings.

A refreshingly delicious way to wash down any Indian meal, this batch cocktail is super simple to prepare. You can actually make the base up to several days in advance. Then just add the tonic and serve over ice.
