After months of food-trucking it on Amarillo’s open roads, Cowboy Gelato Smokehouse will ride on into the Enclave at Coulter this spring.

GPD Construction has begun to complete interior space at the new shopping center on Coulter, just south of Hillside Road, for the popular eatery that closed its Southwest Sixth Avenue location in January.

After shutting its doors, Cowboy Gelato went mobile with its food service while telling fans it would soon have a new southwest Amarillo location.

The Enclave at Coulter is a just-completed retail center at 6103 S. Coulter St. It already is home to a Village Cleaners, an Edward Jones office and Zen Nails & Spa.

A recent Cowboy Gelato Facebook post said it will have a new look and a new menu and concept that will bring along old favorites with a new twist. The reinvented Cowboy Gelato will contain a full bar and a stage for live music, the post said.

City of Amarillo building permit information places the interior construction cost of the 2,300-square-foot interior space at $135,000.
