Chai Tini

Ingredients:

  • 1 can unsweetened coconut milk
  • 3 tablespoons vodka
  • 2 tablespoons brown sugar chai syrup

 

For the brown sugar chai syrup:

  • 3/4 cup water
  • 1/3 cup dark brown sugar
  • 1/2 teaspoon whole black peppercorns
  • 2-3 cardamom pods, optional
  • 1 chai tea bag
  • 1/2 cinnamon stick

 

Method:

Pour coconut milk into a blender; process 1 minute or until smooth, scraping sides, if necessary. Place 1 tablespoon blended coconut milk in a cocktail shaker; reserve remaining coconut milk for another use. Add vodka, syrup, and ice to coconut milk, cover and shake vigorously for 30 seconds. Strain into a martini glass. Serve immediately. Yield: 1 serving.

Combine 3/4 cup water and dark brown sugar in a microwave-safe liquid measuring cup; microwave at high power for 2-3 minutes or until sugar dissolves, stirring every 30 seconds. Immediately add peppercorns and remaining ingredients; steep 5 minutes. Discard tea bag. Allow remaining ingredients to steep 15 minutes; strain. Refrigerate syrup. Yield: about 3/4 cup.
